# Char Restaurant Opens in Downtown St. Albans

Downtown St. Albans has a new reason to make dinner plans. Char Restaurant, a steak and seafood spot at 1 Federal Street, welcomed its first guests on Saturday, October 17, with a grand opening from 4 to 10 p.m. β€” and the dining room at One Federal is cooking again.

That address has a long dining history in the city. Char is the fourth restaurant to serve food out of the One Federal building, which had been quiet since Off the Rails closed in 2024. Owners Nate and Kristen Messier spent months bringing the space back to life, reconfiguring the bar so it sits apart from the dining room as its own place to talk, visit, and relax, and hiring a full team to run the kitchen and the floor. Seeing the lights back on near the corner of Federal and Lake streets is good news for everyone who wants a lively downtown after dark.

## Good Company, Great Taste

Char's promise is right on its homepage: "Good company. Great taste." The kitchen is built around char-grilled cooking and bold flavors, starting with grass-fed, pasture-raised Black Angus beef. The steak lineup runs from an 8-ounce sirloin and a 12-ounce New York strip to an 8-ounce filet mignon and Char's signature 16-ounce ribeye, finished with garlic-herb compound butter.

The seafood side is just as serious. Look for seared scallops in a white wine browned butter sauce, pan-seared salmon, seafood-stuffed haddock and shrimp, lobster ravioli in a cognac cream sauce, and a lobster mac and cheese made with lump Maine lobster. To start, there are maple butter rolls with house-made whipped maple butter, fried cheese curds, a baked lobster dip, and the Carne Asada Board β€” char-grilled, citrus-marinated skirt steak served sliced with green chili sauce, jalapeΓ±o crema, garlic aioli, and roasted Fresno peppers.

## Vermont on the Menu

For a steakhouse, Char keeps a lot of Vermont on the table. The mashed potatoes are made with Vermont cheddar. Maple shows up everywhere, from the whipped butter on those rolls to the Maple Fest Burger, which comes with maple mayo, a fried egg, caramelized onions, and grilled applewood-smoked bacon. And the draft list pours Vermont favorites β€” Fiddlehead, Lawson's Sip of Sunshine, Switchback, and Citizen Cider β€” with Stowe Cider and Heady Topper in cans. Desserts stay close to home, too: an apple caramel blossom topped with maple caramel, and a cheesecake you can finish with maple caramel sauce.

Families are welcome, as well. The kids' menu covers everything from steak bites and crispy fish bites to mac and cheese and a quesadilla, and there is a full lineup of mocktails and zero-proof pours β€” plus frozen chocolate milk β€” for anyone skipping alcohol.

## Why It Matters for St. Albans

A new restaurant opening is always a bet on its hometown. The Messiers' bet brings kitchen and dining-room jobs, a busy dining room, and one more reason for folks across Franklin County to spend an evening in downtown St. Albans instead of driving elsewhere. The work is not finished, either β€” the owners have talked about updating the outside of the space and making more room for live music in the courtyard next door, which would add even more life to that corner of the city.

Char is now open Tuesday through Saturday, 4 to 10 p.m., with lunch hours promised soon. Reservations are recommended and are taken by phone only, at 802-528-2008. Whether it's a dinner for two, a long-overdue catch-up, or a full-on celebration, St. Albans has a new table waiting.

Welcome to the neighborhood, Char β€” and congratulations to Nate, Kristen, and the whole team on opening night.
